Looking for a meatloaf recipe but not the same boring old way. This is a roll up with a surprise of spinach and feta in it!

Ingredients

  • 1/4 cup shredded carrot
  • 1/2 bread crumbs
  • 1 (10ounce) fresh spinach (cooked down)
  • 1/2 cup chopped onion
  • 1/2 cup crumbled fat free feta cheese
  • 1 1/2 lbs ground turkey
  • 1 cup quick oat or old fashioned oat, uncooked
  • 1 teaspoon garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt (optional)
  • 1/4 teaspoon ground black pepper
  • 1/2 cup nonfat milk
  • You can use frozen spinach **

Preparation

Step 1

Preheat over to 350 degrees.
Combine all of the ingredients together except the spinach and feta in a large bowl.
On a piece of wax paper lay out the mixture and flatten into a rectangle shape. Make sure the meat is even.
Spread an even layer of spinach then feta on the rectangle.
Carefully lift up the side of the wax paper and roll into a pinwheel. Tuck ends in.
Transfer to a greased baking sheet.
Bake for 30 minutes uncovered then an additional 15 minutes covered in tinfoil.
Let cool before slicing into 8 portions.
