Banana Bread PRINT
|1¼||teaspoon baking powder|
|½||teaspoon baking soda|
|2||eggs, slightly beaten|
|1||cup mashed banana, about 2-3 bananas|
Sift flour; measure. Add baking powder, soda and salt; sift again.
Cream shortening; gradually add sugar and beat until light and fluffy. Add eggs and mix until smooth.
Add dry ingredients alternately with the mashed banana, stirring just enough to combine. do not beat.
Turn into greased loaf pan (9 1/2 × 5 1/2). Bake 350 degerees for one hour.
Note: Works well as muffins also. I like to use very ripe bananas. If you have ripe bananas but not the time, peel bananas and freeze to use later.
