| 2 | large tomatoes, coarsely chopped |
| ½ | sweet onion, chopped |
| 2 | tbsp. olive oil |
| 1 | tbsp. chopped fresh oregano |
| 1 | tsp. chopped fresh basil |
| 2 | tsp. chopped fresh parsley |
| ½ | loaf Italian bread, cut into 1-inch slices |
| ¼ | c. freshly grated Parmesan cheese |
1. Preheat oven to 400 degrees F
2. In a medium bowl, combine the tomatoes, onion, olive oil, oregano, basil and parsley. Place the bread on a baking sheet and top with tomato mixture. Sprinkle with Parmesan.
3. Bake for 8-10 min, or until the bottom of the bread is browned. Allow to cool 5 min before serving.
