Great recipe when feeding a large group of people.
|16-20||C. pinto beans (10 lb. bag=25 C.; 8 lb bag=20 C.)|
|2||large onions, chopped|
|1||picnic ham, cubed (about 4 lbs.)|
|1||large white potato|
Soak beans overnight in soda water (2 T. baking soda). Drain water and cover beans with fresh water. Add onions and ham. 1 large white potato (cut in half) added to beans helps to counteract gas. Cook at low temperature (275 - 300 degrees) approximately 6 hours or until beans are tender. Discard potato after cooking.
