| 2 | cans black beans, drained & rinsed well |
| 2 | cups frozen corn |
| 1 | large green bell pepper, chopped |
| 1 | large red bell pepper, chopped |
| 2 | medium tomatoes, chopped |
| ½ | cup red onion, chopped |
| 2 | tbls fresh cilantro, chopped (optional) |
| ½ | tsp crushed red pepper or a pinch of cayenne |
| ½ | cup reduced-fat Italian Dressing |
1. Mix vegetables together well in a large bowl.
2. Toss with salad dressing.
Optional:
If using less dressing, add a tablespoon or two of balsamic vinegar.
