Trying to cut the animal fat down from my diet, I purchased a large pack of veggie burgers from Costco. After making about 10 veggie burgers, I started to ask myself, what am I going to do with the remaining 40? Well...here is just one suggestion....
|2||Costco Veggie Burgers|
|2||9Grain 100 Calorie OraWheat Sandwich Thins|
|4-5||Thin Slices Cucumber|
|4-5||Thin Slices Onion|
|½||Cup - Pine Nuts|
|2||tbs. Parmesan Cheese|
|12||Spears Fresh Asparagus|
|½||Tomato thinly sliced|
|2||tbs. Extra Virgin Olive Oil|
|2||slices Dofini Havarti Deli Sliced Cheese or Jack Cheese|
1). Heat a a 9 inch cast iron skillet on low/med heat then add 1 tbs. Olive Oil. 2). Place 2 Costco veggie patties on the skillet 3). Place Asparagus spears around the patties 4). Drizzle 1 tbs olive oil on the asparagus spears 5). Add pine nuts to vacant area within skillet. 6). While the patties/pine nuts/asparagus are cooking, divide sandwich thins in half and toast on high toaster setting. 7). Stir the pine nuts and asparagus often to obtain even cooking while patties are browning. 8). Flip the patties after about 3-4 minutes and continue to stir the pine nuts/asparagus at the same time for an additional 3- 4 min. 8). Remove the sandwich thins from the toaster and top each with one slice of cheese. 9). Layer on top of the bread and cheese... Veggie burger Thin tomatoe slices Thin cucumber slices Thin onion slices Fresh grated parmesan cheese Salt and Pepper 10). Garnish the sides of the plate with a generous helping of asparagus/pine nuts.
