Ingredients

  • 2 lg potatoes
  • 1 lb butternut squash (1/2- 3/4 c.)
  • 1/4 c. melted butter
  • 1/4 tsp cumin
  • 1 tsp salt
  • 2 tsp butter

Step 1

Bake potatoes. While potatoes bake cut skin from squash, cut into cubes, place in vegetable
steamer, boil 15 minutes or until very soft.

Cool potatoes slightly. Cut them in half and scoop out pulp from skin. Take care not to tear skin.

Combine squash, potato pulp, ¼ cup butter, cumin and salt in food processor until creamy.

Heap squash mixture into potato skins shells. Brush with 2 tablespoons of butter and sprinkle with paprika. Place under broiler for 10 minutes or until lightly brown.
