Pressure Cooker Saucy Herbed Pork Chops

Ingredients
- 6 Pork chops (1 inch thick)
- 1/3 cup all-purpose flour
- 1/3 cup olive oil
- 1 large onion, sliced
- 2 garlic cloves, crushed
- 1/4 cup chopped parsley
- 1 (15oz.) can crushed tomatoes, undrained
- 1 cup chicken broth
- 2 Tbs. brown sugar
- 1 1/2 tsp. salt
- 1/2 tsp. crushed red pepper flakes
- 1 1/2 tsp. dried thyme
- 1 tsp. ground fennel
- 2 Tbs. milk or half-and-half
- 2 Tbs. potato starch or flour
- Cooked noodles or rice

Step 1
Dust pork chops with flour, shaking to remove excess flour. In a pressure cooker, heat oil. Add chops, 2 at a time, and saute in hot oil until browned on both sides. Transfer pork chops to a platter, reserve.
Add onion, garlic, and parsley and saute in hot oil 2 minutes, stirring well and scraping bottom of pan. Stir in tomatoes, broth, brown sugar, salt, pepper flakes, thyme, and fennel. Add pork chops. Secure lid. Over high heat, bring to high pressure. Reduce heat to maintain pressure and cook 14 minutes. Release pressure and remove lid.
Continure cooking over medium heat while blending milk and potato starch in a small bowl. Using tongs, transfer pork chops to a serving platter. Whisk starch mixture and cook, stirring 1 minute. Spoon sauce over the pork chops. Serve with noodles or rice.
