Squash Rockefeller

Good side dish. Weight Watchers = 1 point per serving

Ingredients

2 yellow squash
1-010 oz. pkg. frozen chopped spinach
½ tsp. garlic salt
dash black pepper
dash red pepper
2 Tbsp. + 2 C. chicken broth
3 wedges Laughing Cow cheese
2 Tbsp. Parmesan cheese
1 Tbsp. bread crumbs

Directions

Cook squash in boiling water for 10 minutes. Drain and cool. Cut in half lengthwise, scoop out seeds. Place in non-stick pan. Cook spinach, drain well. Squeeze between paper towels. In non-stick skillet saute' onion with 2 Tbsp. chicken broth. Add spinach, 1/2 C chicken broth, Laughing Cow, garlic salt, and both peppers. Stir until cheese melts. Spoon into squash boats and sprinkle with Parmesan cheese and bread crumbs. Bake at 400 degrees F. for 20 minutes.
