| 1 Tbsp vegetable oil | |
| 1 sm onion - chopped | |
| 1 cup rice | |
| 3 cloves garlic - chopped | |
| 1 can diced stewed tomatos | |
| 2 cups chicken broth | |
| ½ tsp cumin | |
| Salt and pepper to taste |
In a large saucepan, sauté onion and rice in oil till browned.
Add garlic, tomatoes, chicken broth, and seasoning; bring to a boil.
Cover and reduce heat to low. Simmer for 20 minutes or until liquid is absorbed.
