Ingredients

  • 3 (14-ounce) cans fat—free, less-sodium chicken broth
  • 2 (14.5-ounce) cans no salt—added diced tomatoes with roasted garlic, undrained
  • 1 (15.5—ounce) can cannellini beans or other white beans,
  • rinsed and drained
  • 1 (1O—ounce) package frozen chopped spinach, thawed
  • 1 cup water
  • 1 1/2 cups frozen chopped onion, thawed
  • 1 medium carrot, chopped
  • 1 medium zucchini, quartered and sliced
  • 2 teaspoons olive oil
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon black pepper
  • 1/2 cup uncooked small seashell pasta
  • 2/3 cup (2.5 ounces) freshly grated Parmesan cheese

ln Italian, minestrone means "big soup." This filling combination of beans, fresh and frozen vegetables, and pasta lives up to the name. Vegetables lose their crunch when they’re frozen, so using frozen chopped onion ensures that the onion won’t sti/I be crunchy after cooling. If you’d rather use fresh, microwave chopped fresh onion at HIGH for a minute or two to precook it a little.
