| 1 can rinsed chickpeas | |
| 1 can rinsed mixed beans | |
| handful chopped parsley | |
| 1 stalk chopped celery | |
| 2 chopped green onions | |
| Dressing | |
| ¼ cup sugar | |
| ¼ cup vinegar | |
| zest and juice of 1 orange | |
| ½ tsp cumin | |
| heat and stir, cool | |
| stir in ¼ cup olive oil |
combine all ingredients, toss with dressing.
Let sit for a few hours or overnight.
