African Honey Bread

Ingredients
- 1 Package yeast
- 1/4 Cup lukewarm water
- 1 egg
- 1/2 Cup honey
- 1 Tablespoon Coriander
- Cup flour
- 1/2 Teaspoon cinnamon
- 1/4 Teaspoon cloves
- 1 Teaspoon salt
- 1 Cup lukewarm milk
- 4 Tablespoons melted butter

Step 1
Sprinkle yeast into lukewarm water. Stir to dissolve and set the bowl in a warm spot for 5 minutes, or until the yeast bubbles.
Combine the egg, honey, coriander, cinnamon, cloves, and salt in a deep bowl and mix with a wire whisk. Add the yeast mixture, milk, and melted butter and beat until the ingredients are well blended. Stir in the flour, 1/2 cup at a time, using only as much as necessary to make a dough that can be gathered into a soft ball. When the dough becomes too stiff to stir easily, blend in additional flour with hands.
Turn out onto lightly floured surface and knead thoroughly. Rub hands with a little melted butter if the dough sticks to the board or your fingers. Kneed until smooth and elastic, about 10 minutes. Place the dough in a large lightly greased bowl, cover with a towel and allow to rise until double in bulk.
Spread melted butter over the bottom and sides of a 3-quart souffle dish. Punch the dough down with a single blow and knead lightly for about 2 minutes. Shape the dough into a round and place in the buttered dish, pressing it down gently into the corners so it covers the bottom of the dish completely. Cover with a towel and allow to rise until double in bulk. It is very slow and time will vary up to 2 1/2 hours.
Bake in the center of a 300F preheated oven for 50 to 60 minutes or until top is crusty and golden brown.
