Ingredients

  • 2-1/4 C. diced red potatoes (about 12 oz.)
  • 1 (10 oz.) bag cauliflower florets (about 3 cups)
  • 1/2 C. chopped green bellpepper
  • 1/2 C. chopped celery
  • 1/4 C. light mayonnaise
  • 1/4 C. fat-free sour cream
  • 1/4 C. chopped dill pickles
  • 1 tbls. cider vinegar
  • 1 tbls. prepared mustard
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper

Step 1

Place potatoes and cauliflower in a large microwave-safe bowl. Cover with wax paper; microwave on HIGH 8-14 minutes or until tender. Drain and rinse with cold water; drain.

While vegetable mixture cooks, combine celery, green pepper and next 7 ingredients in a large bowl. Add potato and cauliflower; stir to combine.

Let stand 15 minutes before serving.
