Ingredients
- 1 head cauliflower, cut into florets
- 1/4 cup chopped onion
- 1/2 cup low-fat cheddar cheese, shredded
- 1/2 cup panko bread crumbs
- 2 large eggs, lightly beaten
- 1/2 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 1 teaspoon olive oil, divided

What To Do:
In a large pot of boiling water, cook cauliflower and onion about 10-15 minutes, or until fork tender; drain.
Mash cauliflower with a potato masher or beat with an electric mixer until smooth.
Stir in cheese, panko, eggs, salt, and cayenne pepper. Form cauliflower mixture into 3-inch patties.
In a large skillet or griddle, heat 1 tbsp olive oil over medium heat. Cook the patties in batches, using remaining oil, 4-5 minutes per side, or until golden and set. Keep warm in oven on low temperature until all batches are finished.
