  • 1 C butter
  • 3/4 C brown sugar, firmly packed
  • 1 t vanilla
  • 12-oz. chocolate chips
  • 1 pkg. chopped pecans (8 oz.)
  • Saltine crackers

Preparation

Step 1

On a cookie sheet with sides, lay down foil and fold it up at the edges so that the mixture can’t go under the foil. Lay down the crackers on the foil salt side down. In a saucepan, melt butter and add sugar and vanilla. Stir until it comes to a boil. When it starts to boil, put on a timer for 5 minutes. (See * below). Stir mixture constantly for the 5 minutes. It will become caramel like in color and consistency. Pour mixture over the crackers, making sure that each cracker is covered and that the mixture doesn’t go underneath the foil which would make it impossible for the foil to be peeled from the candy. Bake in oven for 5 minutes at 350. Remove from oven and sprinkle chocolate chips over the candy. Put back in the oven for 2 minutes. When you remove it from the oven, take a knife and spread the chocolate around the candy. Sprinkle with pecans and freeze for 3 hours. Once frozen, peel the foil from the candy and break into pieces. *Make sure you time the second step exactly or the caramel will burn.
