Ingredients

  • For Orange Icing (optional):
  • 2 eggs, slightly beaten
  • 1/2 cup orange juice
  • 1/2 cup butter, melted
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1 8-oz. pkg. pitted whole dates, snipped
  • 3/4 cup chopped walnuts
  • 1/2 cup sifted powdered sugar
  • 3 to 4 teaspoons frozen orange juice concentrate, thawed, or orange juice

Preparation

Step 1

1. Preheat oven to 350 degrees F. Grease an 8x8x2-inch baking pan; set aside. In a medium mixing bowl combine eggs, orange juice, and butter. Set aside.

2. In a large mixing bowl combine flour, sugar, baking powder, and salt. Stir in dates and walnuts. Toss lightly with a fork to coat dates and nuts with the flour mixture. Stir in egg mixture until well combined.

3. Spread mixture into prepared pan. Bake about 30 minutes or until a toothpick inserted in center comes out clean. Cool the bar cookies in the baking pan on a wire rack. Cut into bars. If desired, drizzle bars with Orange Icing. Makes 16 bars.

4. Orange Icing:In a small bowl stir together 1/2 cup sifted powdered sugar and 3 to 4 teaspoons frozen orange juice concentrate, thawed, or orange juice. Stir until a drizzling consistency.
