Ingredients
- 3 cups Cream
- 3 cups Sucrose
- 2 cups Corn Syrup
- 1 teaspoon Salt
- 18 oz 64% Valrhona Chocolate
- Cocoa Nibs for garnish

Preparation
Step 1
1. Place chocolate in a large mixing bowl and set aside.
2. In a medium sauce pot bring cream, sugar, syrup and salt to a boil.
3. Using a candy thermometer let the milk mixture come up to 248 degrees Fahrenheit.
4. Once the candy has reached the proper temperature, pour over the chocolate and stir to emulsify.
5. Pour immediately onto a sheet tray and let cool.
6. Once cool, pop the chocolate out of the pan and cut into small logs about the size of your pinky finger.
7. Top each candy with cocoa nibs for added texture
