Ingredients

  • For the salad:
  • 1 medium fresh tomato, chopped
  • 1/2 medium red onion, chopped
  • For the dressing:
  • 3 tablespoons olive oil
  • 1 tablespoon white wine vinegar (or white balsamic vinegar)
  • 1 tablespoon chopped fresh parsley
  • 1 clove garlic, chopped
  • 1/2 teaspoon dried basil
  • 1/8 teaspoon red pepper flakes
  • 1/2 pinch dried oregano
  • Sub ingredients:
  • 1 French baguette (or 2 submarine rolls), split
  • 3 types of cold cuts (ex, sausage, salami, prosciutto, ham, chorizo, pepperoni...)
  • 1 cheese of choice (ex. provolone, Edam, mozzarella)
  • Add to salad:
  • pickle slices
  • some lettuce, rinsed and torn

Preparation

Step 1

1. In a large bowl, toss together the tomatoes and onion.

2. In a separate bowl, whisk together the dressing ingredients.

3. Pour over the salad, and toss to coat evenly. Refrigerate for about 1 hour.

4. Spread the baguette/rolls open, and layer the deli meats and the cheese evenly on each roll.

5. Toast lightly, until the cheese melts

6. In the meantime, take the salad out of the fridge and add the pickles and the lettuce.

7. Top with some of the salad, close the rolls and serve.
