Ingredients

  • 3 large sweet potatoes or yams
  • 3 tablespoons olive oil
  • 3/4 cup Flour
  • 1 tsp Garlic powder
  • 1 tsp Onion Powder
  • 1 tsp Salt
  • 1/2 - 1 tsp Black Pepper
  • 2 tsps Paprika
  • 1/4 tsp Chili powder
  • 1/4 tsp Celery Salt
  • 2 lrg Eggs

Preparation

Step 1

Preheat oven to 450.
Line the cookie sheet with parchment paper.
Spook the oil onto the parchment paper and tilt the cookie sheet to get an even coating of oil. Set aside.
Cut each potato into 8 wedges.
Mix flour and spices.
Crack the eggs into a second bowl and whisk.
Dip Each potato wedge into the egg and then the flour mixture. Place onto prepared baking sheet.
Spray potatoes with nonstick cooking spray.
Bake for 20 minutes.
Flip over each wedge and bake for another 15 minutes.
