Zippoli is a fancy word for donut!


5 pounds flour
2 packets yeast
tablespoon salt
2 quarts water
raisins, gold (optional)
anchovy (optional)


Mix all ingredients in an extra-large bowl or Dutch Oven. Knead dough thoroughly. Allow dough to rest until it doubles in size. Punch dough down and again allow to rest until it doubles in size. Pull a small amount of dough, about the size of a baseball and twist it. Add raisins or anchovies in center as you are twisting the dough, if desired. Fry in very hot oil. First fry plain zippoli, then zippoli with golden raisins, and then the zippoli with the anchovies.
