Ingredients

  • 6 russet potatoes, sliced into 1/4-inch slices
  • 1 cup cheddar cheese, shredded
  • 1 cup Monterey cheese, shredded
  • 8 slices bacon, cooked and crumbled
  • 2 cups milk
  • 2 large eggs
  • Salt and pepper
  • Fresh or dried parsley, to garnish (optional)

Step 1

Preheat oven to 375°F.

Peel and slice potatoes about 1/4-inch thick. Cook and crumble the bacon and then shred the cheese.

Butter a baking dish and layer half of the potato slices on the bottom, season with salt and pepper to taste. Sprinkle the layer of potatoes with cheese and bacon, then cover with the remaining potato slices.

In a bowl, add the milk and eggs; mix well and pour over the potatoes. Sprinkle with parsley or other herbs if you desire.

Cover with foil and bake for about 90 minutes or until the custard is cooked and set.

Let the dish rest 15 minutes before serving and enjoy!
