Ingredients
- 1 1/3 cups spelt flour
- 1/2 cup oats
- 2 tsp cinnamon
- 1 tsp nutmeg
- 1/2 tsp ground cloves
- 1 tsp baking soda
- 1/2 tsp salt
- 1 1/2 cups peeled & grated squash (winter or butternut squash)
- 1/3 cup pumpkin seeds
- 2 tsp grated ginger
- 2/3 cup maple syrup
- 1/2 cup milk
- 1/3 cup oil (or can substitute with apple sauce)
- 1 tbsp apple cider vinegar

Preparation
Step 1
1.Preheat oven to 375°.
2.Whisk together the first 7 ingredients in a large bowl. Stir in the squash. Add the seeds, ginger, syrup, milk, apple sauce, and vinegar, and stir just until all flour is absorbed.
3.Portion the batter evenly into 12 muffin cups (us paper liners or lightly coat tray with oil) and bake for 20-22 minutes or until a toothpick inserted in center comes out clean.
