Ingredients

  • 1/4 (1/2) cup Long-grain white rice
  • 3/4 (1 1/2 cups) cup defatted chicken broth + 1/4 cup water
  • 1/8 (1/4) tsp salt
  • 1/8 (1/4) dried thyme
  • 1/3 (2/3) cup 1% low fat or skim milk
  • 1/3 (2/3) cup diced cooked chicken or turkey
  • 2 (4) mushrooms, thinly sliced
  • Dash (1/4 tsp) Worcestershire sauce
  • 1/4 (1/2) cup frozen green peas
  • 2 (4) tbsp coarsely shredded Cheddar cheese

Preparation

Step 1

Combine the rice, water, or broth, salt and thyme in a 1 quart (or 2 quart) microwave-safe casserole.
Microwave on high power for 5 minutes. Stir well.

Microwave on medium power (70%) for a total of 10 minutes; stop and stir after 5 minutes.

Stir in the milk, chicken or turkey, mushroom, and Worcestershire sauce. Cover and microwave on medium for a total of 3 (or 5) minutes; stop and give the casserole a quarter turn after 1 ½ (or 2 ½ minutes).

Stir in the peas and sprinkle with Cheddar; cover and microwave on medium for 2 (or 3) minutes, or until the peas are tender. Let the casserole stand for 5 minutes before serving.
