  • 1 1/2 teaspoons baking powder
  • 1/8 teaspoon salt
  • 6 tablespoons softened butter
  • 2/3 cup sugar
  • 3 egg yolks
  • 3/4 teaspoons vanilla extract
  • 1/2 cup milk

Preparation

Step 1

For Cupcakes:
Preheat oven to 350°F.

In a medium bowl, combine flour, baking powder, and salt.

In a large bowl, beat butter with sugar on high for 2 minutes. Beat in egg yolks and vanilla extract. Beat in half the flour mixture on low. Add milk and beat briefly. Beat in remaining flour just until combined.

Spoon batter into paper liners in a 12-cup muffin pan. Bake for about 20 minutes. Cool completely before decorating.

For Pretty Bird Cupcake:
Spread cupcake with chocolate frosting. Fit a piping bag with a small star or grass tip. Fill bag with frosting and pipe a nest onto cupcake. Top with a Peeps chocolate mousse–flavored chick and a couple of colorful candy eggs.

For Hip Chick Cupcake:
Spread cupcake with white frosting. Tint coconut yellow with food coloring, then sprinkle on top. Use small chocolate candies for eyes and a piece of orange gumdrop for a beak.

For Cute Cottontail Cupcake:
Spread cupcake with white frosting. Stick pieces of edible grass on top, and add a Peeps marshmallow bunny and candy carrots or jelly beans.
