Warning: These wings are extremely hot. They're made with the hottest pepper in the world, the bhut jolokia, (available at kalustyans.com) so these incendiary wings are only for the bravest of chileheads.

|½||cup cider vinegar|
|2||tablespoons cold butter, diced|
The Wings Line a baking sheet with foil, add wings seasoned with salt and pepper, and cook in a 400° oven for 1 hour. Select one of the sauces below, and immediately toss the wings with sauce. The Sauce With gloves on, cut the stems off the chiles. Place them in a small saucepan over medium heat, with the cider vinegar and salt. Bring to a simmer, steep for 20 minutes, and purée with an immersion blender. Add the cold butter, and whisk until no chunks of butter remain. Immediately toss with crispy wings.
