Preparation
Step 1
Add the sausage to the skillet and cook it until it has browned and crumbled. In the last few minutes of cooking add in the garlic and let it cook.
Put the sausage, garlic cloves, onions, celery, carrots, zucchini, chicken broth diced tomatoes, lentils, salt, and pepper into a large pot. Mix everything together and cook until it boils.
Lower down the heat and let the soup simmer. Place a lid on the pot. Let the soup cook for 1 hour until the lentils are tender. When the soup is done, season it with basil, oregano, and Parmesan cheese on top for garnish.
