Ingredients

  • 4 (7 oz.) skinless salmon fillets
  • 4 tablespoons brown sugar
  • 4 tablespoons bourbon
  • 3 tablespoons low-sodium soy sauce
  • 1 tablespoon grated and peeled fresh ginger
  • 2 tablespoon fresh lime juice
  • 3 garlic cloves, minced
  • 1/4 teaspoon freshly ground black pepper
  • Canola oil to coat the grill grates
  • 1/4 cup thinly sliced green onions

Preparation

Step 1

1. Combine first 7 ingredients in a large zip-top plastic bag and remove 4 tablespoons for later.
2. Add fish to bag; seal. Marinate in refrigerator 4 hours, turning occasionally.
3. Heat the grill to 500-550° F. Coat the grates with canola oil to prevent sticking.
4. Remove fish from the marinade and place the flesh side on the grill first.
5. Cook fish 4 minutes on each side or until the internal temperature reaches 145° F.
6. Place 1 fillet on each of 4 plates; drizzle each serving with about 2 teaspoons sauce. Sprinkle each serving with 1 tablespoon green onions.
