Onion Soup with Cheese Croutons

Ingredients
- 2 Tbsp. margarine or butter
- 3 cups sliced onions
- 1/4 tsp. minced garlic
- 8 cups beef stock
- 1 tsp.chopped fresh thyme
- 1/2 tsp. beef base
- 2 bay leaves
- 1/4 cup white wine
- CHEESE CROUTONS
- 6 (1/2 inch) slices French bread
- 1 Tbsp.margarine or butter, melted
- 3 Tbsp. grated Parmesan cheese
- 3 Tbsp. shredded Swiss cheese

Preparation
Step 1
In a 3-quart saucepan melt margarine over medium-high heat; stir in onions and garlic. Cook, stirring often, until onions become golden brown (about 45 minutes). Stir in beef stock, thyme, beef base and bay leaves. Bring to a boil; reduce heat to low. Simmer 30 minutes or until flavors are blended. Remove bay leaves. Stir wine into soup just before serving. Season to taste with salt and cracked pepper.
Heat oven to 400 degrees. Brush both sides of bread with melted margarine. Sprinkle tops with Parmesan and Swiss cheese. Bake until toasted and cheese is melted.
Spoon soup into serving bowls; top with croutons.
