  • 1 cup granulated sugar
  • 1/4 cup light brown sugar (don't use dark)
  • 1 stick salted butter, room temperature
  • 2 eggs
  • 1-1/2 cups VERY ripe bananas, mashed
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1 teaspoon baking soda
  • 2-1/2 cups all purpose flour

Step 1


Preheat oven to 350 degrees F, move the rack to a low position and spray a 9x5x3 loaf pan with butter flavored non-stick spray.

In the bowl of an electric mixer, whisk the sugars and butter on low.

While still mixing on low, add the eggs, bananas, buttermilk, vanilla and spices.

Increase the speed to medium for 30 seconds.

Back on low speed, add the baking soda and flour. Stir just until it's fully mixed.

Pour the batter into the loaf pan.

Place the loaf pan in the enter of the oven and bake for 70-80 minutes, until a toothpick comes out of the center clean.

Cool for 10 minutes and slide a butter knife along the sides of the bread to release it from the pan. Invert the pan to remove the loaf and cool for one hour on a wire rack.
