Ingredients

  • 2 bags 94% Fat Free Smart Pop (2.9 oz. bags)
  • 1/3 cup dried cranberries
  • 1 1/2 cups miniature marshmallows
  • 2 tablespoons butter or Smart Balance vegetable margarine
  • 1/4 cup peanut butter
  • 1 large egg white
  • 3 tablespoons no-calorie granulated sweetener (or 4 packets any sugar substitute)

Preparation

Step 1

1. Pop 2 bags of popcorn per package directions Pour the popcorn into a large bowl, removing any un-popped kernels. Sprinkle the popcorn with cranberries.

2. Preheat oven to 300 F. Heavily coat a 15″ x 10″ jelly roll pan with nonstick cooking spray.

3. In a small saucepan, melt butter or margarine and marshmallows over low heat, stirring frequently. Remove from heat. Add peanut butter, egg white and sweetener. Whisk together until well blended. Pour mixture over popcorn cranberry mixture and toss to coat evenly.(Keep mixing until the popcorn is evenly coated). Pour coated popcorn onto prepared baking pan. Spread out evenly.

4. Bake for 20-25 minutes. Popcorn will be golden brown. Allow to cool at room temperature. Break into large pieces. Serve.
