Ingredients
- 6 Cups Cooked Diced Chicken Breasts
- 6 Cups Low Sodium Chicken Broth
- 1 lb. Great Northern Beans (soaked in water overnight)
- 2 medium onions, chopped
- 2 Jalapeno Peppers, seeded and dices.
- 2 Chili Peppers, diced
- 1 1/2 tsp. Oregano
- 2 tsp Cumin, ground
- 1/4 tsp cayenne pepper
- 2 Garlic Cloves, minced
- 1 Cup Salsa
- 1 Tbsp. Olive Oil

Preparation
Step 1
Simmer beans, 1/2 the garlic and half the onions for 2 hours in the chicken broth. Make sure beans are soft.
Add Chicken and salsa.
Saute peppers, spices and remaining onions in olive oil. Add to Chili.
Simmer for an hour.
Serve with light sour cream or reduced fat cheese for added flavor!
