Ingredients

  • Equipment:
  • Chicken – I had 2 thighs and 2 wings left so that is what I used. You can use chicken breast if you like.
  • 2-3 cloves of garlic minced
  • 1/4 cup peas
  • 1/4-1/2 cup white wine
  • 1 cup chicken stock
  • flour for dredging
  • 2-3 potatoes (I used red skin potatoes)
  • salt and pepper to taste
  • pan #1 for chicken (oven proof)
  • pan #2 for potatoes
  • sheet pan for potatoes
  • preheat oven to 375

Preparation

Step 1

*Chicken*

heat 1-2 tablespoons of olive on on pan #1

salt and pepper chicken

dredge chicken in flour

drop chicken in pan and cook until golden brown

add garlic

add wine and reduce for 5-10 minutes

add chicken stock

cover and put in oven for 45 minutes or until internal temp of chicken read 180

add peas and potatoes last minute

*Potatoes*

slice the potatoes into wedges

heat 1-2 tablespoons of olive oil and drop potatoes

cook until goden brown

place potatoes in sheet pan and cook in lower rack of oven until tender

add potatoes to pan #1 last minute
