  • 1 head Cauliflower, broken into florets
  • 1 cup Low-Fat Sour Cream, you can use non-fat
  • 1 cup shredded Cheddar Cheese
  • 1/2 cup Corn Flakes, crushed
  • 1/3 cup Red Bell Pepper, minced
  • 1/3 cup Onion, chopped finely
  • 1/2 tsp Salt
  • 1/3 cup Corn Flakes, crushed
  • 1/3 cup Parmesan Cheese, flakes or grated

Preparation

Step 1

Place cauliflower florets into salted boiling water and cook for 8 minutes. Drain. Chill.

Chop the red pepper and onion into small pieces and saute in olive oil until tender, about 10 minutes. Set aside to cool.

In a mixing bowl, add the sour cream, cheddar cheese and salt. Set aside. When onion and pepper mixture has cooled, mix them together with the sour cream mixture and pour over the cauliflower. Place all into a well greased 2-quart casserole dish. Place in the refrigerator until ready to use.

About an hour before serving, take the mixture out of the refrigerator and add the 1/2 cup crushed corn flakes, stirring well. Sprinkle the extra cornflakes and the Parmesan cheese on top. Let it sit on the counter for about 30 minutes to take the chill off.

Place in a 325 oven and bake uncovered for about 30-35 minutes, or until bubbly and heated throughout.
