  • 1 cup pretzel crumbs
  • 1/2 cup panko bread crumbs
  • 2 teaspoons garlic salt
  • 1 teaspoon ground mustard
  • 1/2 teaspoon poultry seasoning
  • 1 teaspoon black pepper
  • 1/2 cup all-purpose flour
  • 1/2 cup egg substitute
  • 1 pound chicken tenders
  • 4 cups Dutch baby potatoes
  • 4 cups quartered Brussels sprouts

Preparation

Step 1

Preheat oven to 400.
Combine the first six ingredients (pretzel crumbs through black pepper) in a shallow dish. Place the flour and the egg substitute in separate shallow dishes. Set aside.
Place the potatoes and Brussels sprouts in a baking sheet covered with aluminum foil and coated with cooking spray
Dredge the chicken in the flour, then the egg, then the pretzel mixture and place on a baking sheet covered with aluminum foil and coated with cooking spray.
Place both pans in the oven and bake at 400 for 15 minutes. Turn the chicken over and stir the potatoes and sprouts and bake an addition 10 to 15 minutes or until the chicken is cooked through and the vegetables are fork tender.
