  • 1 pound pork tenderloin
  • 1/4 cup whole grain mustard
  • 1/4 cup light brown sugar
  • 2 teaspoons thyme, minced
  • 1 yellow onion, thinly sliced
  • Salt and pepper, to taste

Preparation

Step 1

Preheat oven to 350 degrees fahrenheit.

Season tenderloin with salt and pepper. In a bowl, whisk together mustard, brown sugar and thyme.

Place a large sheet of aluminum foil onto a clean surface. In the center, place onion slices in a single layer and then place pork on top. Brush with half of the mustard mixture.

Double fold top and ends to seal packet, leaving room for heat circulation inside. Transfer packet to a baking sheet and bake for 25 min or until the internal temperature reads 130 degrees fahrenheit.

Remove from oven. Open packet by cutting along top fold with a sharp knife, allowing steam escape. Brush with remaining mustard mixture. Leaving the packet open, broil for 1 minute or until a nice crust forms on top.

Remove from oven and allow tenderloin to rest for 10 to 15 minutes before slicing and serving.
