White Bean and Rosemary Soup with Roasted Garlic Croutons

Ingredients

2 whole heads garlic
¼ cup plus 2 teaspoons olive oil
1 teaspoon kosher salt , plus more to taste
½ teaspoon freshly ground black pepper , plus more to taste
½ loaf unsliced whole wheat bread , cut into 1-inch cubes
1 tablespoon unsalted butter
2 tablespoons olive oil , plus more for drizzling
1 large onion , chopped (about 2 cups)
2 carrots , peeled and cut crosswise into ¼-inch coins
2 stalks celery , cut into ¼-inch slices
4 cups chicken or vegetable broth
2 cans (14.5 ounces each) white beans , drained, rinsed and drained again
2 tablespoons chopped fresh rosemary
