2 tablespoons minced fresh flat-leaf parsley plus
½ cup minced fresh flat-leaf parsley or more as needed
2 tablespoons minced fresh tarragon leaves

Salt to taste
Freshly-ground black pepper to taste
8 thin slices white bread
1 Vidalia onion - (to 2) sliced very thinly (available seasonally at specialty produce markets and some supermarkets)
