Old-Fashioned Apple Cake w/ Brown Sugar Frosting

This recipe is courtesy of King Arthur Flour... It's awesome, although I just used a cream cheese frosting instead of the Brown sugar frosting... So good!

Ingredients

  • 2 1/3 c unbleached all purpose flour
  • 1 2/3 c granulated sugar
  • 2 t baking soda
  • 3/4 t salt
  • 1 1/2 t Apple Pie Spice (1 t cinnamon + 1/4 t ground Ginger and ground nutmeg each)
  • 2 large eggs
  • 1/2 c unsalted butter softened (if salted reduce salt to 1/4 t)
  • 4 cups peeled, cored and chopped apple (about 1 1/3 pounds whole apples)
  • 1 c toasted walnuts or pecans (diced) (optional)
  • Frosting
  • 7 T unsalted butter
  • 2/3 c brown sugar
  • 1/4 t salt (omit if salted butter)
  • 1 /c c milk
  • 2 1/4 c confectioner sugar
  • 3/4 t vanilla

Preparation

Step 1

Preheat ovent to 325, grease and flour 9x13 pan
to make cake, mix all the ingredients except apples and nuts in a large mixing bowl. Beat until well combined. Mixture will be very stiff and maybe even crumbly
Add the apples and nuts and mix until the apples release some of their juice and the stiff mixture becomes a thick batter, somewhere between cookie dough and brownie batter in consistency.
Spread the batter in the pan, smooth with wet fingers.
Bake the cake for 45 minutes or until cake tester or tootpick inserted in the center comes out clean
Remove the cake from the oven and cook completely. Don't remove cake from pan.
Frosting
Melt butter in small pan over medium heat. Stir in the brown sugar and salt and cook stirring until sugar melts.
Add the milk, bring to a boil and pour in mixing bowl to cool for 10 minutes.
After 10 minutes, stir in the confectioners sugar and vanilla. Beat well. If it's too thin add more confectioner sugar. Spread on the cake while still warm.
Note: if you use Cream Cheese Frosting. Let cake cook completely before frosting.
