Crock Pot Chicken Burrito Bowl/Soup 1 Picture

Ingredients

  • Garnishes:
  • 3 boneless skinless chicken breast diced
  • 1 can rotel (Or a jar of salsa)
  • 1 can corn
  • 1 can chili beans (or black beans, or any other kind you like)
  • 1 onion chopped
  • 1 Tbls chopped garlic
  • 1/4 tsp chipotle
  • 1 tsp chili powder
  • 1/2 tsp oregano
  • 1/4 tsp smoked paprika
  • 1/2 tsp cumin
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 - 1 cup chicken stock
  • You can add any other ingredient.... black olives, bell pepper would be good
  • cooked rice
  • shredded cheese
  • green onions
  • sour cream
  • guacamole or sliced avocado
  • tortilla chips
  • cilantro

Preparation

Step 1

Put everything except the rice in the crock pot. Put in enough chicken stock (or you can use water) to cover the chicken and cook on low for 8 hours.
To make a soup, add more chicken stock.
Serve over rice and garnish with anything you like. I used cheese, sour cream, guacamole, green onions and tortilla chips.....It was delicious!!!
