  • garam masala
  • S&P
  • oil
  • carrots
  • potatoes
  • onions
  • garlic
  • tomatoes
  • coconut milk
  • red bell peppers
  • scallions
  • cilantro
  • tomato slices
  • serve over rice or rice noodles

Preparation

Step 1

1. Cut chicken, season with garam masala (liberally), salt and pepper (lightly), and pan fry (half-cook) then remove from pan to rest.
2. Use the same pan with (seasoned) oil to saute vegetables: carrots and potatoes first, then onions, garlic, and tomatoes next.
3. When the vegetables are half cook, add chicken back to saute.
4. Before the chicken and vegetables fully cooks, add coconut milk and bell peppers.
5. Season to taste (final seasoning)...add more coconut milk if too spicy.
6. Bring to a simmer to finish cooking chicken and vegetables but the less the coconut milk cooks, the better.
7. Garnish with diced scallions, cilantro and tomato slices.
8. The (chow-fun) noodles were soaked, boiled separately then added to the simmering pan, but this would be better served over rice.
