Preparation

Step 1

1. In a large bowl, toss cabbage slices with salt. Squeeze to release excess water.

2. In the same bowl, add ground pork, cilantro, scallions, garlic, soy sauce, ginger, sesame oil, and eggs. Stir well.

3. On a baking sheet, arrange dumpling wrappers about 3 inches apart. Spoon approximately 3/4 Tbsp of filling into each dumpling wrapper. Dip your fingers in water and run it along the edge of the dumpling, folding it in half. Press the top closed and fold a tiny pleat on each side of the dumpling, pressing firmly to seal it closed.

4. In a large oiled skillet over medium-high heat, arrange the dumplings in the pan so that they do not touch. Cook until the bottoms reach a golden brown color.

5. Add 2 Tbsp of cold water into the pan, cover and reduce heat to low. Cook for approximately 4-6 minutes, or until wrappers are translucent and entirely cooked through.

6. Garnish with scallions and sesame seeds. Serve with soy sauce.
