Ingredients
- 1 cup heavy cream
- 1 can (15 oz) pumpkin puree (NOT pumpkin pie filling)
- 2 eggs
- 3/4 cup dark brown sugar
- 2 tablespoons cornstarch
- pinch of salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1 9-inch pie crust, store-bought or homemade
- whipped cream to serve

Preparation
Step 1
Preheat oven to 350 degrees.
Remove the pie crust from the package and roll it over a 9 inch pie baking pan (preferable with a removable bottom) . With your fingers press the pie crust on the bottom and the sides of the baking pan. Set aside.
Combine heavy cream, pumpkin, and eggs in a large bowl.
Combine sugar, cornstarch, salt, cinnamon, nutmeg and ginger in a separate bowl; add to pumpkin mixture. Stir until combined.
Pour into the prepared pie crust.
Bake 50-55 min until middle is set and a knife inserted near center comes out clean. Cool completely on rack.
Cut into slices with a sharp knife and verse with a dollop of whipped cream.
