Ingredients
- Glaze Topping:
- 2 pounds ground beef
- 1 Tbsp. minced onion
- 1 C. dried bread crumbs
- 2 tsp. salt
- 1/2 C. sour cream
- 1 (4 oz.) can sliced mushrooms, drained
- 2 eggs
- 1/2 C. ketchup
- Ketchup
- Light Karo syrup

Preparation
Step 1
Mix the above ingredients together. Shape into 1 loaf or 4 mini loaves. (May freeze for later use.) Bake in a 350 degree oven for 50 minutes.
To make a glaze, mix equal amounts of ketchup and light Karo syrup together. Spoon over the top of the meat loaf. Bake for an additional 10-15 minutes.
Note: This is where you can use your roasting rack. Line a pan with foil and place your rack in the pan. Place the meatloaf on the rack. If it seems like it is burning, put a small amount of water in the pan. Recently, a food editor suggested using 80% lean ground beef while another one felt the meat mixture should reflect 75% beef and 25% ground pork.
