Ingredients

  • Crust:
  • Nonstick vegetable oil spray
  • 1 1/4 Cups Graham Cracker Crumbs
  • 1/4 cup unsalted butter, melted
  • 1 tsp sugar (optional)
  • Filling:
  • 3 8 oz. packages cream cheese, room temperature
  • 1 1/4 cup sour cream
  • 3/4 cup plus 2 Tbsp sugar
  • 2 1/2 Tbsp triple sec or other orange liquor
  • 2 1/2 Tbsp tequila
  • 2 1/2 Tbsp fresh lime juice
  • 4 large eggs (add one at a time)
  • Topping:
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 2-4 Tbsp Tequila
  • Green food coloring
  • Garnish:
  • Very thin lime slices cut in half

Preparation

Step 1

*Crust:* Position rack in center of oven and preheat to 350° F. Spray 9 inch springform pan with vegetable oil spray. Mix graham cracker crumbs and butter in medium bowl until blended. Press crumbs over bottom and 1 inch up sides of prepared pan. Refrigerate crust.

*Filling:* Using electric mixer, beat cream cheese in large bowl until fluffy. Beat in sour cream, then sugar, triple sec, tequila and lime juice. Beat in eggs one at a time.

Pour filling into crust. Bake until outside 2 inches are set and center moves only slightly when pan is shaken, about 50 minutes (52 minutes Corinth oven). Remove from oven; turn off oven.

*Topping:* In a mixer with a whip attachment, whip the cold heavy cream until light and almost fluffy. Gradually add the powdered sugar and tequila. Once all incorporated, add a couple drops of green food coloring.

Run knife around pan sides. Remove cake from pan. Coat top with thick layer of whip topping. Coat sides with thin layer of whip topping and smooth out the top. Over a bowl, press extra graham cracker crumbs on the side and decorate top with lime wedges. Place cake on platter and serve.
