Easy Egg Bake
Can be made ahead and makes a quick healthy breakfast! Serve with salsa if desired.

Ingredients
- 10 eggs, beaten
- 1/4 cup liquid (reserved tomato juice, use milk to complete 1/4 cup)
- 1 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 large onion, diced
- 1 cups tomatoes, chopped
- 1 cup fresh spinach, chopped
- 1/2 -1 cup chopped green pepper
- 1/2 cup salsa (optional)

Step 1
Preheat oven to 300 degrees F. Combine eggs, liquid, salt and pepper in a large bowl and set aside.
Melt butter or coconut oil in skillet over medium heat. Sauté the onion and green pepper for 5 minutes. Add the diced tomatoes and spinach and sauté another 10 minutes, stirring frequently.
Transfer vegetables to egg mixture and combine thoroughly. Pour into a buttered glass pie plate and bake 15-30 minutes or until eggs are set. Do not overcook.
Cut into wedges and serve at room temperature with salsa.
