Mediterranean Savory Salad

Ingredients
- dried tomatoes in oil, drained and chopped 1/4 cup crumbled feta cheese 5 cups spinach or lettuce of your choice 2 tablespoons balsamic vinegar 1/4 cup extra
- virgin olive oil Salt Pepper to taste

Instructions:
Place potatoes in a saucepan. Cover with water so the level is 2 inches above the potatoes and bring to a boil.
Reduce the heat and simmer for 20 minutes or until tender when pierced with a knife. Drain. Or, place the potatoes in a large microwave-safe bowl and cover. Microwave on high for 10 to 12 minutes or until the potatoes are tender.
Refrigerate until cool. Cut the potatoes into quarters and place in a large bowl.
Add the feta cheese, sun-dried tomatoes, and spinach/lettuce. Combine the balsamic vinegar, olive oil, and salt and pepper; mix well and dress the salad.
