Ingredients

  • 1-1/2 cups frozen shelled edamame
  • 1 cup each: chopped tomato and cucumber
  • 1 minced red jalapeno
  • 1/4 cup chopped red onion
  • 1 tbls. soy sauce
  • 2 tsp. each: brown sugar, lemon juice, lime juice and rice wine (mirin)
  • 1 tsp. each: grated ginger and rice vinegar
  • 1/2 tsp. sesame oil

Step 1

Boil frozen shelled edamame as the label directs; drain and rinse under cold water. Toss with tomato and cucumber, minced jalapeno and chopped red onion. Add soy sauce, brown sugar, lemon juice, lime juice and rice wine, grated ginger and rice vinegar, and sesame oil. Toss; season with salt and pepper.
