Ingredients
- 2 cups fresh or frozen baby lima beans
- 1/2 sweet onion (whole)
- pinch thyme
- 1 garlic clove
- 6 bacon slices (I used already cooked bacon and just crisped it up in the microwave)
- 1/2 sweet onion chopped
- 3 cups fresh or frozen sweet corn
- 1 pint cherry tomatoes, halved
- 2 Tbsp butter
- 1 Tbsp red wine vinegar
- 6 or so fresh basil leaves chopped
- 1.5 Tbsp chives chopped

Step 1
Cook limas until tender with the 1/2 onion, thyme & garlic in the water. In a different pan cook the onions in butter and add the corn, cook until tender. Add tomatoes at the end for just a few minutes.
Place all ingredients in a big bowl add basil and vinegar, toss.
You can serve this either hot or cold. I think it is delicious both ways but I prefer it cold. Enjoy~
