Ingredients

  • Filling:
  • 3 eggs
  • 1 cp sugar
  • 2/3 cp pumpkin
  • 1 tsp lemon juice
  • 3/4 cp. flour
  • 2 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp ginger
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1 1/2 cp powdered sugar
  • 8 oz. soft cream cheese
  • 4 tblsp soft butter
  • 1/2 tsp vanilla

Preparation

Step 1

Mix filling ingred. in bowl. Set aside
Grease and flour jelly roll pan
Beat eggs for 2 min. Add sugar slowly while beating. Beat for 3 min. Fold in pumpkin and lemon juice. Mix flour, cinn, nutmeg, ginger and salt and b. powder. Fold into batter. Spread batter in pan/ Bake 15-18 min. Remove from oven, allow to cool enough to handle. Sprinkle conf. sugar onto a terry cloth . Remove cake and place on terry towl and roll jelly fashion. When cool, unroll and spread on filling. Roll up. Wrap in plastic wrap and refridgerate.
